Rose Kaju Katli Recipe
Rose kaju katli for Diwali: cashew powder, milk powder and sugar mixed with rose essence, pink colour, roasted rose petals, ghee and milk, rolled and cut diagonally.
Ingredients
- 1 cup cashew powder
- 1/3 cup milk powder
- 1/3 cup powdered sugar
- 3–4 tbsp milk
- A pinch pink or red food colour
- 1/4 tsp rose essence
- 2 big roses, petals finely chopped
- 1–2 tbsp clarified butter (ghee)
- Oil, to grease the butter paper
Instructions
- Roast the petals. In a small pan, melt 1/4 tsp ghee. Add the chopped rose petals and roast well. Switch off the flame and set aside.
- Mix the dry ingredients. In a mixing bowl, add the cashew powder, powdered sugar and milk powder.
- Add rose and colour. In a small bowl, mix the rose essence with the colour and add it to the dry mixture. Add the roasted rose petals and 1 tbsp ghee and mix everything well.
- Add milk. Add 2 tbsp milk and mix with a spatula. If the mixture is dry, add 1 tbsp more milk.
- Press. For 2 minutes, mix by pressing gently so the mixture releases its fat, which makes the kaju katli softer.
- Roll. Grease a sheet of butter paper with oil. Place the dough on it, spread it evenly and fold the paper over. Flatten it with a rolling pin to the thickness you like.
- Cut. Set the edges and cut the katli diagonally into pieces.
