Ingredients

  • 1 cup milk
  • 1/2 cup all purpose flour
  • 1/3 cup milk powder
  • 2 tbsp sooji (semolina)
  • 1/4 tsp cardamom powder
  • 1 cup sugar
  • 1 cup water
  • A pinch saffron
  • Oil, for frying
  • Eno, optional, for the instant version
  • Pistachio and almond flakes, to garnish

Instructions

  1. Mix the dry ingredients. In a bowl, mix the all purpose flour, milk powder, sooji and cardamom powder well.
  2. Make the batter. Add the milk in small batches to make a smooth, semi thick batter.
  3. Rest. Set the batter aside for 4 to 5 hours. To make it instantly, add eno and set it aside for 1 to 1.5 hours.
  4. Make the syrup. After the resting time, put a pan on the flame and add the sugar and 1 cup water. Keep stirring until the sugar melts completely, then cook on a medium flame for 8 to 10 minutes, stirring occasionally.
  5. Add saffron. Add the saffron and check the thickness of the syrup as shown in the video. Switch off the flame.
  6. Heat the oil. Heat oil in a deep bottomed pan. Stir the batter again.
  7. Fry. Pour a spoonful of batter directly into the pan and let it cook for a minute on a low flame. Flip it as shown in the video and cook on a low to medium flame until light golden.
  8. Soak. Take it out on a plate and dip it in the sugar syrup for 2 minutes so it soaks in the chashni. Make all the malpua the same way.
  9. Garnish. Garnish with pistachio and almond flakes and serve.
