Ingredients

  • 500 g seedless dates (khajur)
  • 1/2 cup almonds, chopped
  • 1/2 cup cashews, chopped
  • 1/2 cup pistachios, chopped
  • 1/2 cup grated coconut (optional)
  • 2 tbsp ghee
  • 2 tbsp poppy seeds (khas khas)

Instructions

  1. Grind the dates. Coarsely grind the dates. Once you get the texture you want, set them aside.
  2. Roast the poppy seeds. Heat a pan and roast the poppy seeds on a low to medium flame for a minute and a half. Take them out onto a plate.
  3. Roast the dry fruits. Reheat the pan and add the ghee. Add the chopped almonds, cashews and pistachios and mix well. Roast on a medium flame for about 2 minutes, stirring continuously so they do not burn.
  4. Add coconut. Add the grated coconut to the dry fruits, lower the flame and let it cook well.
  5. Add dates. Add the roasted poppy seeds, keeping a spoonful aside for the coating, then add the ground dates.
  6. Cook. Mix well on a low flame. The mixture is dense and takes time to mix. Then cook on a medium flame for exactly 3 to 4 minutes. Do not overcook.
  7. Shape. Transfer the mixture to a wide plate and let it cool for a bit. Shape it as you like; Siddhi shapes it into rolls.
  8. Coat. Place a sheet of aluminium foil and sprinkle poppy seeds and pistachios on it. Roll each khajur roll over it so the garnish sticks.
  9. Set. Wrap each roll in aluminium foil and set in the refrigerator for 2 to 2.5 hours.
  10. Slice. Unwrap the rolls on a chopping board and cut them into half inch pieces.
