A sweet and tangy raw mango curry: boiled raw mango cubes tempered with mustard seeds, asafoetida and methi masala, then simmered with red chilli powder and jaggery.
Ingredients
- 1 raw mango, peeled and finely chopped
- 1/2 cup jaggery
- 1 tbsp cooking oil
- 1/2 tbsp red chilli powder
- 1 tsp methi masala
- 1 pinch asafoetida
- 1/2 tsp mustard seeds
- Salt to taste
Instructions
- Cut the mango. Wash, peel and cut the raw mango into small cubes.
- Boil the water. Pour 1 glass of water into a large pot and bring it to a boil.
- Boil the mango. Once the water boils, add the mango cubes and let them boil on a high flame.
- Cook on low. Cook for another 10–15 minutes, this time on a low flame. After 10 minutes, check the mango cubes: they turn a little transparent when they are cooked. If not, cook for another 2–5 minutes.
- Drain. Drain the excess water with the help of a strainer.
- Temper. Heat oil in a pan. Once the oil heats, add the mustard seeds and let them pop. Immediately add the asafoetida, methi masala and mango cubes and mix well.
- Season. Add the red chilli powder, salt and jaggery and slowly mix well.
- Simmer. Let it simmer for a few minutes on medium heat so the jaggery melts. Once the jaggery has completely disappeared, switch off the stove.
