Ingredients

  • 1 cup cashew powder
  • 1/3 cup milk powder
  • 1/3 cup powdered sugar
  • 3–4 tbsp milk
  • A pinch pink or red food colour
  • 1/4 tsp rose essence
  • 2 big roses, petals finely chopped
  • 1–2 tbsp clarified butter (ghee)
  • Oil, to grease the butter paper

Instructions

  1. Roast the petals. In a small pan, melt 1/4 tsp ghee. Add the chopped rose petals and roast well. Switch off the flame and set aside.
  2. Mix the dry ingredients. In a mixing bowl, add the cashew powder, powdered sugar and milk powder.
  3. Add rose and colour. In a small bowl, mix the rose essence with the colour and add it to the dry mixture. Add the roasted rose petals and 1 tbsp ghee and mix everything well.
  4. Add milk. Add 2 tbsp milk and mix with a spatula. If the mixture is dry, add 1 tbsp more milk.
  5. Press. For 2 minutes, mix by pressing gently so the mixture releases its fat, which makes the kaju katli softer.
  6. Roll. Grease a sheet of butter paper with oil. Place the dough on it, spread it evenly and fold the paper over. Flatten it with a rolling pin to the thickness you like.
  7. Cut. Set the edges and cut the katli diagonally into pieces.
