Ingredients

  • 1½ cups cooked rice
  • 1 medium onion, finely chopped
  • 1/4 cup carrot
  • 1/4 cup French beans
  • 1/3 cup paneer (cottage cheese), cubed
  • 1 tbsp oil
  • 1 tbsp butter
  • 1/2 tbsp ginger garlic paste
  • 1/2 tsp cumin seeds
  • 1/2 tsp coriander powder
  • 1/4 tsp black pepper powder
  • 3 cloves and a cinnamon stick
  • Salt to taste
  • 1½ cups coriander leaves, for the paste
  • 1/4 cup mint leaves, for the paste
  • 3 green chillies, for the paste
  • 1/2 lemon, juiced, for the paste
  • 1/2 tsp cumin powder, for the paste
  • 1/2 tsp black salt, for the paste

Instructions

  1. Make the coriander paste. Grind the coriander leaves, mint leaves, green chillies, lemon juice, cumin powder and black salt into a paste.
  2. Temper. Heat a pan and add the oil. Once the oil is hot, add the cumin seeds, then the cloves and cinnamon, and roast for 30 seconds.
  3. Ginger garlic. Add the ginger garlic paste and roast until it is dark brown.
  4. Add the onion. Add the chopped onion, 1/4 tsp salt and the butter, and cook until the butter melts.
  5. Cook the vegetables. Add the carrots and French beans, and cover the pan with a lid on a low flame.
  6. Add paneer and paste. After a minute, add the paneer cubes and the coriander and mint paste. You can also add corn at this stage. Mix everything.
  7. Add the rice. Add the cooked rice, sprinkle salt to taste and mix gently. Add 2 tbsp water so the rice does not stick to the base of the pan while it simmers.
  8. Season and simmer. Sprinkle in the black pepper powder and cumin powder and stir well. Cover the pan with a lid and simmer on a low-medium flame for 2 minutes.
  9. Garnish. Garnish with coriander leaves, switch off the flame and serve.
