Royal Falooda Recipe
Royal falooda: rose syrup, soaked sabja seeds and homemade cornflour falooda sev in a tall glass, topped with a rose milkshake, ice cream and nuts.
Ingredients
- 1 tbsp sabja (tukmaria) seeds, soaked in water
- 1/2 cup cornflour (falooda sev)
- 1½ tbsp sugar (falooda sev)
- 1 cup water (falooda sev)
- Ice cubes and water, in a bowl (falooda sev)
- 1½ glasses chilled milk (milkshake)
- 2 tbsp rose syrup (milkshake)
- 2 scoops ice cream (milkshake)
- 3 tbsp rose syrup, 1½ tbsp per glass, plus a drizzle on top (to assemble)
- 2 to 3 scoops ice cream, to top (to assemble)
- Almond and pistachio flakes (to assemble)
Instructions
- Soak the sabja. In a small bowl, add water to the sabja seeds and let them sit for a while.
- Make the batter. In a bowl, add the cornflour and sugar. Add half a cup of water and whisk well so it is lump free, then add another half cup of water and mix well.
- Chill the ice water. Keep a bowl of ice cubes in water ready in the refrigerator.
- Cook the batter. Heat a pan, stir the cornflour batter once and pour it in. Cook on a medium flame, stirring continuously right to the end so there are no lumps. Once the mixture turns transparent, turn off the gas.
- Fill the bottle. Transfer the cornflour mixture into a squeezy bottle with a nozzle cap.
- Make the falooda sev. Take the ice water bowl out of the fridge and drizzle the mixture into the cold water with the squeezy bottle. The falooda sev is ready. You can store it in the refrigerator for up to 4 days.
- Make the milkshake. In a mixing jar, add the milk, 2 tbsp rose syrup and 2 scoops of ice cream and churn well.
- Layer the glass. In a tall glass, add 1½ tbsp rose syrup, then the bloated, fluffy sabja seeds, then the falooda sev.
- Add the milkshake. Tilt a spoon in the glass and gently pour the milkshake over it, so it does not mix with the layers below.
- Top and serve. Top with some froth, a scoop of ice cream, almond and pistachio flakes and a light drizzle of rose syrup.
