Aam Panna, also called aam ka panna or raw mango juice, is a natural Indian summer drink that is refreshing and energising. Raw mango is cooked with black pepper until soft, ground with sugar, black salt and salt, and strained into a smooth base.
In this recipe I divide the base into three and make three exciting flavours: lemon mint, honey ginger and jeera. Each one is finished with a cup of water and served chilled.
Every recipe on Cooking with Siddhi is cooked in my own kitchen before it goes live.

Aam Panna Recipe
Raw mango cooked with black pepper, ground with sugar and black salt, then turned into three flavours of aam panna: lemon mint, honey ginger and jeera.
Ingredients
- 500 g raw mango, peeled and chopped (base)
- 2 glasses water, to cook the mango (base)
- 10 to 12 black peppercorns (base)
- 1 cup sugar (base)
- 1½ tbsp black salt (base)
- Salt to taste (base)
- 1/3 cup mint leaves (lemon mint)
- 1/2 tbsp lemon juice (lemon mint)
- 1/2 tbsp ginger juice (honey ginger)
- 1 tbsp honey (honey ginger)
- 3 tsp roasted cumin (jeera) powder (jeera)
- 3 cups water, 1 cup for each flavour
Instructions
- Cook the raw mango. In a steel utensil, heat 2 glasses of water, then add the chopped raw mango and the black peppercorns. Cook on full flame with the lid on, leaving a little opening, for 8 to 10 minutes.
- Cool. Once the raw mango pieces turn transparent, switch off the flame and let it cool.
- Grind the base. Add the mango pulp to a mixing jar and save the cooking water for later. Add the sugar, black salt and salt to taste, and grind to a smooth, pulpy paste.
- Strain. Strain the pulpy paste together with the saved water through a strainer. Mix well.
- Divide. Divide the pulpy mixture into 3 equal parts to make the different flavours.
- Lemon mint flavour. In a grinding jar, coarsely grind the mint leaves and lemon juice. Add 1 cup of water to the jar, then pour the mint lemon mixture into one part of the raw mango pulp. Serve chilled.
- Honey ginger flavour. To the second part of the raw mango pulp, add the ginger juice and honey and mix well. Add 1 cup of water, stir well and serve in a glass.
- Jeera flavour. To the third part of the raw mango pulp, add the roasted jeera powder. Add 1 cup of water, then pour into a glass and serve.
