Ingredients
- 1½ cups cooked rice
- 1 medium onion, finely chopped
- 1/4 cup carrot
- 1/4 cup French beans
- 1/3 cup paneer (cottage cheese), cubed
- 1 tbsp oil
- 1 tbsp butter
- 1/2 tbsp ginger garlic paste
- 1/2 tsp cumin seeds
- 1/2 tsp coriander powder
- 1/4 tsp black pepper powder
- 3 cloves and a cinnamon stick
- Salt to taste
- 1½ cups coriander leaves, for the paste
- 1/4 cup mint leaves, for the paste
- 3 green chillies, for the paste
- 1/2 lemon, juiced, for the paste
- 1/2 tsp cumin powder, for the paste
- 1/2 tsp black salt, for the paste
Instructions
- Make the coriander paste. Grind the coriander leaves, mint leaves, green chillies, lemon juice, cumin powder and black salt into a paste.
- Temper. Heat a pan and add the oil. Once the oil is hot, add the cumin seeds, then the cloves and cinnamon, and roast for 30 seconds.
- Ginger garlic. Add the ginger garlic paste and roast until it is dark brown.
- Add the onion. Add the chopped onion, 1/4 tsp salt and the butter, and cook until the butter melts.
- Cook the vegetables. Add the carrots and French beans, and cover the pan with a lid on a low flame.
- Add paneer and paste. After a minute, add the paneer cubes and the coriander and mint paste. You can also add corn at this stage. Mix everything.
- Add the rice. Add the cooked rice, sprinkle salt to taste and mix gently. Add 2 tbsp water so the rice does not stick to the base of the pan while it simmers.
- Season and simmer. Sprinkle in the black pepper powder and cumin powder and stir well. Cover the pan with a lid and simmer on a low-medium flame for 2 minutes.
- Garnish. Garnish with coriander leaves, switch off the flame and serve.
