Ingredients

  • 1/2 cup green gram (whole moong), boiled
  • 1/2 cup sour curd
  • 1½ tbsp oil
  • 1/2 tsp cumin seeds
  • 1/4 tsp asafoetida
  • 1/2 tbsp garlic paste
  • 1 tsp ginger paste
  • 2–3 green chillies, crushed
  • 1/4 tsp turmeric powder
  • 1/2 tbsp red chilli powder
  • 1 tbsp gram flour (besan)
  • 1 tbsp coriander, finely chopped
  • Salt to taste

Instructions

  1. Make the batter. In a bowl with the curd, add the gram flour and whisk into a smooth batter. Make sure there are no lumps.
  2. Temper. In a steel vessel, heat the oil. Once hot, add the cumin seeds and roast for 15 to 20 seconds.
  3. Add the aromatics. Add the asafoetida, garlic and ginger paste and crushed green chillies, and roast on a low flame for a minute and a half.
  4. Add the moong. Add the turmeric powder, red chilli powder and boiled moong dal and mix well. Sprinkle salt to taste.
  5. Add the curd. Add the curd and gram flour mixture and mix everything well.
  6. Add water. On a full flame, add half a cup of water and stir well. Keep the consistency of the kadhi as you like.
  7. Boil. Let it boil well for 3 to 4 minutes, stirring occasionally so the kadhi does not stick to the bottom.
  8. Finish. When the oil starts to appear on top of the kadhi, switch off the flame. The kadhi is ready.
