Stuffed Sabudana Vada Recipe

Enjoying summer you guys? Well, summer brings some great foods and fruits and vegetables along with it!

Apart from being a staple food during fast, did you know that Sabudana is an excellent summer food as it helps regulate the body’s temperature? It is also a good source of protein and aids muscle development, strengthening them in the process.

So today’s recipe is none other than Stuffed Sabudana Vada. Sabudana vada is made with soaked Sabudana, boiled potatoes, crushed peanuts, green chilies and ginger so it has a unique flavor. The twist is the stuffing which further makes it’s delectable. It tastes great with sweet yogurt(curd) or green chutney.

Preparation time : 20 Minutes
Cooking time 15-20 minutes
Total time :40-45 Minutes

Ingredients for the covering :

  • 1 Cup Sabudana/ tapioca pearls (Soak it in normal water for 4-5 hours)
  • 4 Medium Sized Boiled potatoes
  • 2 tablespoon Roasted peanuts (roast it for 2-3 minutes on low-medium flame and then coarsely grind it)
  • 1/2 cup Finely chopped Coriander
  • 2 Finely chopped Green chilli
  • 1 teaspoon Ginger Paste
  • 1/2 teaspoon Roasted Cumin seeds powder
  • Sendha Salt/Black Salt/Rock Salt as per taste
  • Cooking oil for frying

Ingredients for the stuffing

  • 2 Boiled and grated potato
  • Cashew and Raisins
  • Sendha Salt/Black Salt/Rock Salt as per taste
  • 1 tblspoon Ginger & Green Chilli paste
  • 1/2 teaspoon Saunf
  • 1 teaspoon Red chilli powder
  • 1 teaspoon Amchur powder
  • 1 tblspoon grated coconut
  • 1 teaspoon sugar
  • 2 tblspoon Roasted peanuts (roast it for 2-3 minutes on low-medium flame and then coarsely grind it)
  • 2 tblspoon sesame seeds (roast it for 2-3 minutes on low-medium flame and then coarsely grind it)

Process for making vada

  1. In a bowl mash the potatoes and add the soaked and drained Sabudana.
  2. Now add peanuts, coriander, green chili, ginger paste, garam masala, salt to taste to potato and Sabudana mixture and mix all the ingredients very well.

Process for making stuffing :

  1. Grate the potatoes in a bowl
  2. Add peanuts, sesame seeds, ginger chili paste, fennel seeds, red chili powder, amchur powder, and coconut, sugar, salt to taste and finally cashew and raisins.
  3. Mix all the ingredients very well.

The final Process :

  1. Take 1 tbsp vada mixture and make it flat like a ball.
  2. Pour 1 tsp around stuffing mixture in it and close it. Make it a little flat by pressing between your palms or you can make a ball like shape.
  3. Prepare the rest of the vadas same way.
  4. Heat oil for deep frying in a pan.
  5. Gently slide the vadas one by one into the pan and fry it till golden and crispy from both the sides.
  6. Take it out on a kitchen towel to remove the access oil.
  7. Serve it with masala curd or green chutney.
