Rice Kheer Recipe – Indian Rice Pudding

Indians love dessert and that’s the reason there are tons of homemade dessert recipes that belong to India. Every state has it’s own specialty. For example, Andhra Pradesh has Qubani ka Meetha, Bihar has Khaja, Gujarat offers Basundi and Punjab serves Pinni, etc.

Now there one such dessert that is cooked and consumed quite often. Every household cooks it differently yet it tastes absolutely yummy. It is none other than Kheer. It is also called meetha bhaat, payasam, payasa, or dudhpak.

So here is my ode recipe to the kheer. Cooked slowly in full-fat milk, it has a creamy and rich texture. And cardamom and added dry fruits further enhance the taste and experience.

Rice Kheer Recipe

Ingredients

  • 1/2 cup Rice Small
  • 2 litre Milk Full Fat
  • 1/2 cup Sugar
  • 1/3 cup Nuts Chopped
  • 1/4 tsp cardamom crushed
  • saffron A pinch

Instructions

  • Firstly, heat a frying pan and add a small quantity of water. Once the water is hot, pour 2-liter full-fat milk in the pan.
  • Boil the milk on high flame and after a boil let it simmer on medium flame.
  • Make sure the milk is boiled properly and keep scraping the sides of the pan and mix it with the milk.
  • Once the milk boils well add 1/2 cup rice and on low-medium flame let the rice cook.
  • Stir frequently so that the milk doesn't stick to the bottom of the pan.
  • After a few minutes, stir again, you will observe that the rice is cooked.
  • Now, add the sugar, dry fruits, 1/4 crushed cardamom, saffron and mix well.
  • The rice kheer is ready to be served. Switch off the flame.
  • It is your choice to serve the kheer at room temperature or chilled in summer or consume hot in winter.
  • Garnish chopped dry fruits and just dive right into it.
